This is one you are going to love, I promise you! Gorgeously crispy on the outside and juicy perfectly cooked meat on the inside, all marinated in an incredibly rich aromatic Piri Piri rub. You just can’t go wrong. Cooking in them in the air fryer is an absolute dream too. If you haven’t got yourself one yet, you should! It is quick, easy, and even better it’s so much healthier for you as you’re not cooking with oil, but you still get the taste and texture you would expect from frying. It’s incredible.
Air Fryer Crispy Piri Piri Chicken Drumsticks
Piri Piri is a type of chilly that originated in South America (as they all did) but now grows wildly in Africa and is grown commercially there too. Piri Piri chicken is a specialty of the Algarve in Portugal and has been around since the 15th century. Piri Piri sauce is ground piquant pepper mixed with an assortment of classic European flavors, garlic, vinegar, olive oil, salt, bay leaves, and lemon juice. It is becoming wildly popular around the world and you’ll be hard-pressed to find a menu without it almost anywhere you go. I like to add a little extra spice to mine to give it my own slant with some paprika, pepper powder and chili flakes so it packs a really nice punch. It goes really well with some roasted veg or a lovely green salad to keep things nice and simple. You could even try it with my Kachumbari salad, or my Jamaican rice and peas. Get this one into your regular roster, you won't regret it. Enjoy!
6 chicken drumsticks
2 Tbsp lemon juice
1/2 tsp paprika
1/2 tsp pepper powder
1/2 tsp salt
1/2 tsp Chili Flakes
3 tbsp piri piri
First, add the chicken drumsticks in a large bowl and add lemon, paprika, pepper powder, salt, chili flakes, and piri piri. Mix everything well together.
Leave the marinated chicken sit for at least 30 minutes in the fridge.
Add the drumsticks in the air fryer basket, make sure they are not to close to each other. Air fry them at 400ºF (204ºC) until the chicken is crisp at the outside, and done from the inside . Fry them for 20 to 25 minutes, flipping the chicken halfway through cooking.
Transfer the chicken to a serving platter. Sprinkle with parsley and serve with a herbs yogurt sauce or hot sauce.
