Whenever I want to feel energized and full of life, Githeri is exactly what I need. This dish is packed with protein and is one of my favorite tropical treats after a powerful workout. Originating from Kenya, this delicacy can be served in lots of different variations, involving different vegetables and spices.

Today, I am presenting you my own version, served on pastry dough. I used fresh spinach sauce instead of eggs to paint the pastry before putting it in the oven. Make sure you add the sauce just before serving, to avoid that it soaking through the pastry.
