2 Large bread slices
1 Tbsp unsalted butter
6 Bacon slices
Salt and Pepper
3 Tbsp freshly grated Parmesan
Preheat oven to 180°C / 350°F.
Cut your favorite bread in slices. I used a large sourdough bread. Toast will work just fine as well.
Then, cut a hole in the center of each bread slice, using a 1-1/2-inch cookie cutter. I used a heart-shaped cookie cutter and managed to get 3 hearts into each slide.
Keep the leftover bread to accompany with the baked egg or reserve for another use. Spread all bread slices with margarine, and place it margarine-sides down in a baking sheet, and put them into the oven for about 5 minutes.
In the meantime, fry for each bread piece a slice of bacon and put it aside. Then take the bread out of the oven and put 1 rolled slice of bacon and 1 egg into each hole.
Sprinkle some salt and pepper and fresh grated parmesan cheese over it. Bake it for 15-20 minutes or until the eggs are set. You can also bake the leftover bread pieces for 5 minutes and serve them as a side dish.
