Lemony Cauliflower and Chickpea
1 medium head cauliflower, cut into florets
1 can chickpeas, drained and rinsed
1 tablespoon extra-virgin olive oil
2 tablespoons lemon juice
Salt and ground black pepper, to taste
4 flatbreads, toasted
2 ripe avocados, mashed
In a bowl, mix the chickpeas, cauliflower, lemon juice and olive oil. Sprinkle salt and pepper as desired.
Put inside the air fryer basket and air fry at 425ºF (218ºC) for 25 minutes.
Spread on top of the flatbread along with the mashed avocado. Sprinkle with more pepper and salt and serve.
