Baked Asparagus and Potato
They are incredibly good for you too! They are packed full of essential micronutrients like calcium, iron, magnesium, phosphorus, zinc, as well as a multitude of vitamins, C, B, A, K, and E. They help with weight loss and lowering your blood pressure as well as improving your digestion. There are also some studies that suggest asparagus is really good for a healthy pregnancy. This recipe is one of my favorite ways of enjoying asparagus, air-fried with nothing more than a drizzle of olive oil and salt. It goes so well with the roasted potatoes (also air-fried for convenience). And just a smidge of whole grain mustard and cottage cheese round off this simple recipe beautifully. You could try it paired with my Puerto Rican Garlic Shrimps or my Lemon Chicken Skewers if you’re wanting to have something with it.
1/2 kg potatoes, cut into wedges
1 1/2 bunch asparagus, trimmed
2 tablespoons olive oil
Salt and pepper, to taste
¼ cup crumbled cottage cheese
¼ cup buttermilk
1 tsp mustard
1/2 tsp chili
Salt and black pepper, to taste
Spritz the air fryer basket with cooking spray.
Put the potatoes in the air fryer basket and roast at 400ºF (204ºC) for 20 to 22 minutes until golden brown. Shake the basket halfway through the cooking time.
When ready, remove the potatoes from the basket to a platter. Cover the potatoes with foil to keep warm. Set aside.
Place the asparagus in the air fryer basket and drizzle with the olive oil. Sprinkle with salt and pepper.
Roast at 400ºF (204ºC) for 6 to 8 minutes, shaking the basket once or twice during cooking, or until the asparagus are cooked to your desired crispiness.
Meanwhile, make the cheese sauce by stirring together the cottage cheese, buttermilk, and mustard in a small bowl. Season as needed with salt and pepper.
Transfer the asparagus to the platter of potatoes and drizzle with the cheese sauce. Serve immediately.
