Roasted Asparagus and Potato

This is the perfect spring dish for those sunny days when the weather is starting to turn and you’re longing to eat outside. It works really well as a lovely light lunch on those busy days or even a cheeky snack if you’re wanting something a bit different. Asparagus is a massively undervalued vegetable in my opinion and should really be more of a staple on people's dinner table. It’s an incredible vegetable, so versatile, and can be prepared in any number of ways, boiled, grilled, fried. Its natural flavors are delicious even when eaten raw, but once cooked they really deliver.
